Dry Salted Codfish (Bacalhau / Bacalao)

Salted dry cod is a product with great tradition in many countries, being one of the oldest methods to preserve food products.
Since the Discoveries, the Portuguese have consumed Cod. This was fished in the North Atlantic, processed and dried, thus guaranteeing a quality product with a long period of validity.
Cod is an excellent food, easy to digest, rich in proteins, minerals and vitamins.
It is a lean fish, however extremely rich in polyunsaturated fatty acids, namely omega 3, essential to the proper functioning of the cardiovascular and immune system.
Proper soaking of any dry salted product is essential.
It should be made in cold water, preferably in a refrigerated environment (refrigerator), for a time appropriate to the size and quantity of the pieces.
The raw materials used in the production of dry salted fish are of excellent quality, from fishing vessels on the high seas or from small shore boats commanded by knowledgeable and experienced fishermen.
The transformation of the fish is done in state-of-the-art equipment that guarantees high levels of hygiene, safety and quality, including sophisticated cooling and water and waste purification systems.
We sell dry salted fish produced from four fish species, namely:
• Cod / Cod
( Gadus morhua )
• Pollack / Saithe
( Pollachius virens )
• ling / ling
( Molva molva )
• Zarbo / Brosme
( Brosmius brosme )
All of these species are captured in the North Atlantic, then scaled, salted and dried according to the traditional parameters of each market.
In our partners' factories, more than 17,000 MT of dry salted fish are produced annually and exported to the most diverse destinations in the five continents.

Salted and dried fish produced according to the traditional requirements and curing standards of each market and customer specifications, in the black wing or white wing fotmat.
In the Portuguese Classification the fish is selected between Primeiras and Sortido.
In Primeiras we have first class fish without major preparation defects.
In the Sortidos we find fish with preparation defects.
In terms of size, fish are classified by their individual weight, distributed into the following ranges:
Jumbo > 4.0kg
Especial > 3.0kg <4.0kg
Graúdo > 2.0kg <3.0kg
Crescido > 1.0kg <2.0kg
Corrente > 0.5kg <1.0kg
Miúdo > 250g <500g
In the International Classification the fish is selected between Imperial and Universal.
The Imperial category indicates the fish of superior quality while in the Universal we find fish with preparation defects.
The size of the fish is defined by the number of fish per 25 kg or 50 kg box. In other words, the 7/9 caliber means that in a box with 25kg net we have 7 to 9 fish.

Makayabo
Migas & Afins
This is a product with long and strong traditions in the African market.
It's a main staple of the eating habits and an important source of protein in many countries like Angola, Democratic Republic of Congo and Republic of Congo. In the photo panel above the first 3 photos are of Makayabo .
Makayabo is the name that is locally attributed to dry salted saithe in those markets. In international terms this product is best known for its English name: Saithe ( Pollachius virens )
The Makayabo is usually between 25 / 40cm and is scaled keeping the fish's backbone, therefore being identified by the name Backbone Saithe.
This product is usually subjected to an extra level of curing to present low levels of humidity, increasing its conservation properties.
It is traditionally sold in 9kg carton boxes.
Through our partners we supply Migas (shredded pieces), fillets and fingers from Alaska Pollock ( Theragra chalcogramma ).
We also supply Cod Migas (shredded pieces) produced from Gadus morhua and Gadus macrocephalus.
All merchandise is subject to quality control and monitoring of the entire process and the products can be produced according to the particular demands of each customer.
